Mosaic № 53. Three hints, from a gentle nudge to the full answer. Open only as many as you need.

Hint 1: what kind of picture is it?

Today's subject comes from science.

The caption reads: “The bread is a farm, and you are the farmer.”

Hint 2: the Laws, in plain words

You place 7 stones into a frame of 36 cells. Every cell is filled exactly once.

Start with the largest region the Laws name: it has the fewest ways to fit.

The answer: what the mosaic shows

Wild Yeast

A sourdough starter is flour, water, and whatever drifted in — wild yeasts plus lactic acid bacteria, usually outnumbering the yeast a hundred to one. The bacteria make the acids that give the flavour and lower the pH until competitors cannot survive; the yeast makes the gas that lifts the loaf. They are not merely coexisting, they are trading: the bacteria break down sugars the yeast cannot use, and the yeast releases amino acids the bacteria need. Kept warm and fed, that community is effectively immortal. Bakeries maintain starters that have been eating continuously for over a century.
